A rich and spicy pasta dish featuring tender chicken and penne in a creamy Cajun sauce.

For the Crust:
- 8 oz penne pasta
- 2 boneless, skinless chicken breasts, sliced
- 1 tbsp Cajun seasoning
- 2 tbsp olive oil
- 1 red bell pepper, sliced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Cook penne pasta according to package instructions. Drain and set aside.
- Season chicken slices with Cajun seasoning. Heat olive oil in a large skillet over medium-high heat and cook chicken until browned and cooked through, about 5-6 minutes. Remove and set aside.
- In the same skillet, add bell pepper, onion, and garlic. Sauté until softened, about 3-4 minutes.
- Pour in heavy cream and chicken broth. Bring to a simmer, then stir in Parmesan cheese until melted and sauce thickens slightly.
- Return cooked chicken to the skillet and add the cooked penne. Toss to coat everything in the sauce. Season with salt and pepper to taste.
- Garnish with fresh parsley and serve hot.
