For the Crust:

  • 8 oz penne pasta
  • 2 boneless, skinless chicken breasts, sliced
  • 1 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Cook penne pasta according to package instructions. Drain and set aside.
  2. Season chicken slices with Cajun seasoning. Heat olive oil in a large skillet over medium-high heat and cook chicken until browned and cooked through, about 5-6 minutes. Remove and set aside.
  3. In the same skillet, add bell pepper, onion, and garlic. Sauté until softened, about 3-4 minutes.
  4. Pour in heavy cream and chicken broth. Bring to a simmer, then stir in Parmesan cheese until melted and sauce thickens slightly.
  5. Return cooked chicken to the skillet and add the cooked penne. Toss to coat everything in the sauce. Season with salt and pepper to taste.
  6. Garnish with fresh parsley and serve hot.

You can customize the seasonings to taste.
