For the Crust:

  • 1 lb Italian sausage, casings removed
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (16 oz) package potato gnocchi
  • 1 (14 oz) can diced tomatoes
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

1. Prepare the Crust:

  1. In a large pot, brown the Italian sausage over medium heat, breaking it into crumbles. Drain excess fat if needed.
  2. Add diced onion and minced garlic to the pot. Sauté until softened, about 3-4 minutes.
  3. Pour in chicken broth and bring to a simmer. Stir in gnocchi and diced tomatoes. Cook for 5 minutes or until gnocchi floats to the top.
  4. Reduce heat to low and stir in heavy cream, spinach, basil, and oregano. Simmer for 2-3 minutes until spinach wilts.
  5. Season with salt and pepper to taste. Serve hot, garnished with grated Parmesan cheese.
