For the Crust:
- 1 lb Italian sausage, casings removed
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 (16 oz) package potato gnocchi
- 1 (14 oz) can diced tomatoes
- 1 cup heavy cream
- 2 cups fresh spinach
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
Instructions
1. Prepare the Crust:
- In a large pot, brown the Italian sausage over medium heat, breaking it into crumbles. Drain excess fat if needed.
- Add diced onion and minced garlic to the pot. Sauté until softened, about 3-4 minutes.
- Pour in chicken broth and bring to a simmer. Stir in gnocchi and diced tomatoes. Cook for 5 minutes or until gnocchi floats to the top.
- Reduce heat to low and stir in heavy cream, spinach, basil, and oregano. Simmer for 2-3 minutes until spinach wilts.
- Season with salt and pepper to taste. Serve hot, garnished with grated Parmesan cheese.
