For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 cup sliced mushrooms
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Season chicken breasts with salt, pepper, and dried thyme.
  2. Heat olive oil and butter in a large skillet over medium-high heat. Add chicken and cook until golden brown, about 5-6 minutes per side. Remove and set aside.
  3. In the same skillet, add mushrooms and sauté until softened, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.
  4. Reduce heat to medium-low and pour in heavy cream, stirring to combine. Add parmesan cheese and stir until melted and smooth.
  5. Return chicken to the skillet, spooning sauce over the top. Simmer for 5-7 minutes until chicken is cooked through and sauce thickens.
  6. Garnish with fresh parsley before serving.
