For the Crust:
- 4 boneless, skinless chicken breasts
- 1 cup sliced mushrooms
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1 tbsp olive oil
- 1 tbsp butter
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Season chicken breasts with salt, pepper, and dried thyme.
- Heat olive oil and butter in a large skillet over medium-high heat. Add chicken and cook until golden brown, about 5-6 minutes per side. Remove and set aside.
- In the same skillet, add mushrooms and sauté until softened, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.
- Reduce heat to medium-low and pour in heavy cream, stirring to combine. Add parmesan cheese and stir until melted and smooth.
- Return chicken to the skillet, spooning sauce over the top. Simmer for 5-7 minutes until chicken is cooked through and sauce thickens.
- Garnish with fresh parsley before serving.
