For the Crust:

  • 1 lb Italian sausage, casings removed
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup ditalini pasta, uncooked
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 cups fresh spinach, chopped

Instructions

1. Prepare the Crust:

  1. In a large pot, brown the Italian sausage over medium heat, breaking it into small pieces as it cooks.
  2. Add the diced onion and minced garlic, sautéing until the onion is translucent.
  3. Pour in the chicken broth and bring to a boil. Add the ditalini pasta and cook according to package instructions.
  4. Reduce heat to low and stir in the heavy cream, Parmesan cheese, basil, and oregano. Simmer for 5 minutes.
  5. Add the chopped spinach and cook until wilted. Season with salt and pepper to taste.
  6. Serve hot with extra Parmesan cheese if desired.
