For the Crust:

  • 8 oz pasta of choice
  • 1 cup pumpkin puree
  • 1/2 cup heavy cream
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • Fresh sage leaves for garnish

Instructions

1. Prepare the Crust:

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Stir in pumpkin puree, heavy cream, nutmeg, salt, and black pepper. Cook for 5 minutes, stirring occasionally.
  4. Add cooked pasta to the skillet and toss to coat evenly with the sauce.
  5. Sprinkle Parmesan cheese over the pasta and mix well. Garnish with fresh sage leaves before serving.
