For the Crust:
- 8 oz pasta of choice
- 1 cup pumpkin puree
- 1/2 cup heavy cream
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- Fresh sage leaves for garnish
Instructions
1. Prepare the Crust:
- Cook pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Stir in pumpkin puree, heavy cream, nutmeg, salt, and black pepper. Cook for 5 minutes, stirring occasionally.
- Add cooked pasta to the skillet and toss to coat evenly with the sauce.
- Sprinkle Parmesan cheese over the pasta and mix well. Garnish with fresh sage leaves before serving.
