For the Crust:

  • 8 oz fettuccine pasta
  • 2 boneless, skinless chicken breasts, sliced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Cook fettuccine according to package instructions. Drain and set aside.
  2. Season chicken with chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.
  3. Heat olive oil in a large skillet over medium heat. Cook chicken until golden and cooked through, about 6-8 minutes per side. Remove and set aside.
  4. In the same skillet, pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and smooth.
  5. Add cooked pasta and chicken to the sauce, tossing to coat. Stir in diced tomatoes and cilantro.
  6. Serve immediately, garnished with extra cilantro if desired.
