For the Crust:
- 8 oz fettuccine pasta
- 2 boneless, skinless chicken breasts, sliced
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup diced tomatoes
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Cook fettuccine according to package instructions. Drain and set aside.
- Season chicken with chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.
- Heat olive oil in a large skillet over medium heat. Cook chicken until golden and cooked through, about 6-8 minutes per side. Remove and set aside.
- In the same skillet, pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and smooth.
- Add cooked pasta and chicken to the sauce, tossing to coat. Stir in diced tomatoes and cilantro.
- Serve immediately, garnished with extra cilantro if desired.
