For the Crust:
- 4 chicken thighs (bone-in, skin-on)
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 4 tbsp unsalted butter (softened)
- 1 tbsp fresh parsley (chopped)
- 1 tbsp fresh thyme (chopped)
- 1 tsp lemon zest
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C).
- Pat chicken thighs dry and rub with olive oil. Season with salt, pepper, garlic powder, and paprika.
- Heat an oven-safe skillet over medium-high heat. Place chicken skin-side down and cook until skin is golden and crispy, about 5-7 minutes.
- Flip chicken and transfer skillet to the oven. Bake for 20-25 minutes or until internal temperature reaches 165°F (74°C).
- While chicken cooks, mix softened butter with parsley, thyme, and lemon zest in a small bowl.
- Remove chicken from oven and let rest for 5 minutes. Serve with a dollop of herb butter on top.
