For the Crust:

  • 4 chicken thighs (bone-in, skin-on)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 4 tbsp unsalted butter (softened)
  • 1 tbsp fresh parsley (chopped)
  • 1 tbsp fresh thyme (chopped)
  • 1 tsp lemon zest

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C).
  2. Pat chicken thighs dry and rub with olive oil. Season with salt, pepper, garlic powder, and paprika.
  3. Heat an oven-safe skillet over medium-high heat. Place chicken skin-side down and cook until skin is golden and crispy, about 5-7 minutes.
  4. Flip chicken and transfer skillet to the oven. Bake for 20-25 minutes or until internal temperature reaches 165°F (74°C).
  5. While chicken cooks, mix softened butter with parsley, thyme, and lemon zest in a small bowl.
  6. Remove chicken from oven and let rest for 5 minutes. Serve with a dollop of herb butter on top.
