For the Crust:
- 1 cup cornbread mix
- 1/4 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 cup buttermilk
- 1 large egg
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 cup corn kernels (optional)
- Vegetable oil for frying
Instructions
1. Prepare the Crust:
- In a large bowl, whisk together cornbread mix, flour, sugar, salt, and baking powder.
- Add buttermilk and egg, stirring until just combined. Fold in corn kernels if using.
- Heat oil in a deep skillet or pot to 350Β°F (175Β°C).
- Drop tablespoon-sized portions of batter into the hot oil, frying in batches to avoid overcrowding.
- Fry for 2-3 minutes per side until golden brown and crispy. Drain on paper towels.
- Serve warm with honey or maple syrup for dipping.
