For the Crust:

  • 1 cup cornbread mix
  • 1/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup buttermilk
  • 1 large egg
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 cup corn kernels (optional)
  • Vegetable oil for frying

Instructions

1. Prepare the Crust:

  1. In a large bowl, whisk together cornbread mix, flour, sugar, salt, and baking powder.
  2. Add buttermilk and egg, stirring until just combined. Fold in corn kernels if using.
  3. Heat oil in a deep skillet or pot to 350Β°F (175Β°C).
  4. Drop tablespoon-sized portions of batter into the hot oil, frying in batches to avoid overcrowding.
  5. Fry for 2-3 minutes per side until golden brown and crispy. Drain on paper towels.
  6. Serve warm with honey or maple syrup for dipping.
