For the Crust:
- 2 lbs baby potatoes, halved
- 4 tbsp unsalted butter, melted
- 4 cloves garlic, minced
- 1 tsp dried rosemary
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 2 tbsp fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss halved potatoes with olive oil, salt, and pepper. Spread evenly on the baking sheet.
- Roast for 25-30 minutes, flipping halfway, until golden and crispy.
- In a small bowl, mix melted butter, minced garlic, and dried rosemary.
- Toss roasted potatoes with garlic butter mixture and garnish with fresh parsley before serving.
