A hearty and comforting beef stew slow-cooked to perfection with tender vegetables in a rich broth.

For the Crust:
- 2 lbs beef stew meat, cubed
- 1 onion, chopped
- 4 carrots, sliced
- 4 potatoes, cubed
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup frozen peas
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
- 2 tbsp cornstarch (optional for thickening)
Instructions
1. Prepare the Crust:
- Place beef, onion, carrots, potatoes, and garlic in the crock pot.
- In a bowl, mix beef broth, tomato paste, thyme, rosemary, salt, and pepper. Pour over ingredients in crock pot.
- Cover and cook on low for 7-8 hours or high for 4-5 hours, until beef is tender.
- If desired, mix cornstarch with 2 tbsp water and stir into stew during last 30 minutes to thicken.
- Stir in frozen peas during last 10 minutes of cooking. Serve hot.
