A festive and fun cookie shaped like an Easter basket, perfect for holiday celebrations.

For the Crust:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup shredded coconut, colored green
  • 1/2 cup jelly beans or mini chocolate eggs
  • 1/4 cup ribbon licorice or thin strips of fondant

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
  4. Roll out the dough to 1/4-inch thickness on a floured surface. Cut into basket shapes using a cookie cutter or by hand.
  5. Bake for 10-12 minutes or until the edges are lightly golden. Let cool completely on a wire rack.
  6. Once cooled, decorate the cookies by spreading a thin layer of frosting on top. Sprinkle with green coconut to resemble grass.
  7. Arrange jelly beans or mini chocolate eggs on top of the coconut. Use licorice or fondant strips to create the basket handle.
