For the Crust:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 3 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup shredded coconut, colored green
- 1/2 cup jelly beans or mini chocolate eggs
- 1/4 cup ribbon licorice or thin strips of fondant
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
- Roll out the dough to 1/4-inch thickness on a floured surface. Cut into basket shapes using a cookie cutter or by hand.
- Bake for 10-12 minutes or until the edges are lightly golden. Let cool completely on a wire rack.
- Once cooled, decorate the cookies by spreading a thin layer of frosting on top. Sprinkle with green coconut to resemble grass.
- Arrange jelly beans or mini chocolate eggs on top of the coconut. Use licorice or fondant strips to create the basket handle.
