For the Crust:
- 2 cups mixed dried fruits (raisins, currants, cherries, apricots)
- 1 cup chopped nuts (walnuts, almonds)
- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 1/4 cup brandy or orange juice
- 1 tsp baking powder
- 1/4 tsp salt
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (160°C). Grease and line a 9-inch cake pan.
- In a bowl, soak the dried fruits and nuts in brandy or orange juice for 15 minutes.
- In a separate bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla.
- Sift flour, baking powder, salt, and spices together. Gradually fold into the butter mixture.
- Drain the soaked fruits and nuts, then fold into the batter until evenly distributed.
- Pour batter into the prepared pan and bake for 50-60 minutes or until a toothpick comes out clean.
- Let the cake cool completely before slicing. Optionally, brush with extra brandy for flavor.
