For the Crust:
- 1 cup unsalted butter
- 8 oz high-quality dark chocolate (70% cocoa)
- 1 1/4 cups granulated sugar
- 6 large eggs
- 1 tsp vanilla extract
- 1/2 cup unsweetened cocoa powder
- 1/4 tsp salt
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
- Melt butter and chocolate together in a double boiler or microwave, stirring until smooth. Let cool slightly.
- Whisk sugar into the chocolate mixture. Add eggs one at a time, whisking well after each addition. Stir in vanilla.
- Sift cocoa powder and salt into the batter, folding gently until fully incorporated.
- Pour batter into prepared pan and bake for 30-35 minutes until edges are set but center is slightly jiggly.
- Cool completely in pan before removing. Dust with powdered sugar or serve with berries if desired.
