For the Crust:

  • 1 cup unsalted butter
  • 8 oz high-quality dark chocolate (70% cocoa)
  • 1 1/4 cups granulated sugar
  • 6 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
  2. Melt butter and chocolate together in a double boiler or microwave, stirring until smooth. Let cool slightly.
  3. Whisk sugar into the chocolate mixture. Add eggs one at a time, whisking well after each addition. Stir in vanilla.
  4. Sift cocoa powder and salt into the batter, folding gently until fully incorporated.
  5. Pour batter into prepared pan and bake for 30-35 minutes until edges are set but center is slightly jiggly.
  6. Cool completely in pan before removing. Dust with powdered sugar or serve with berries if desired.
