For the Crust:
- 1 lb cheese tortellini
- 1 cup cherry tomatoes, halved
- 1/2 cup black olives, sliced
- 1/2 cup red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 cloves garlic, minced
- 1/4 cup grated parmesan cheese
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
1. Prepare the Crust:
- Cook the tortellini according to package instructions, then drain and rinse under cold water.
- In a large bowl, combine the cooked tortellini, cherry tomatoes, black olives, red bell pepper, red onion, and parsley.
- In a separate bowl, whisk together mayonnaise, sour cream, garlic, parmesan cheese, lemon juice, salt, and black pepper.
- Pour the dressing over the tortellini mixture and toss gently to coat evenly.
- Refrigerate for at least 1 hour before serving to allow flavors to meld.
