For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup sugar
  • 2 large eggs
  • 1/2 cup extra virgin olive oil
  • 1/2 cup whole milk
  • 1 tsp vanilla extract
  • 1 1/2 cups seedless red grapes, halved

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In another bowl, beat sugar and eggs until pale and fluffy. Gradually add olive oil, milk, and vanilla, mixing well.
  4. Fold in the dry ingredients until just combined. Gently stir in the halved grapes.
  5. Pour batter into the prepared pan and bake for 30-35 minutes or until a toothpick comes out clean.
  6. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
