For the Crust:
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 3/4 cup sugar
- 2 large eggs
- 1/2 cup extra virgin olive oil
- 1/2 cup whole milk
- 1 tsp vanilla extract
- 1 1/2 cups seedless red grapes, halved
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan and line with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt. Set aside.
- In another bowl, beat sugar and eggs until pale and fluffy. Gradually add olive oil, milk, and vanilla, mixing well.
- Fold in the dry ingredients until just combined. Gently stir in the halved grapes.
- Pour batter into the prepared pan and bake for 30-35 minutes or until a toothpick comes out clean.
- Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
