A light and nutritious egg salad with Greek yogurt instead of mayonnaise for a healthier twist.

For the Crust:

  • 6 large hard-boiled eggs, peeled and chopped
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1/4 cup diced celery
  • 2 tablespoons finely chopped red onion
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh dill (optional)

Instructions

1. Prepare the Crust:

  1. In a medium bowl, combine Greek yogurt, Dijon mustard, lemon juice, salt, and pepper. Mix well.
  2. Add chopped eggs, celery, red onion, and fresh dill (if using) to the bowl. Gently stir to coat all ingredients with the yogurt mixture.
  3. Taste and adjust seasonings as needed. Serve on whole-grain bread, lettuce wraps, or with crackers.

Notes

You can customize the seasonings to taste.
