  • 1 (14.5 ounce) can stewed tomatoes
  • 1 1/2 cups cubed potatoes
  • 1/2 cup shredded cabbage
  • 2 tablespoons dried parsley
  • 1 tablespoon tomato paste
  • 2 cloves minced garlic
  • 1 teaspoon salt
  • 1/2 cup elbow macaroni
  • 1/2 cup grated Parmesan cheese (for garnish)

Instructions

  2. Start: Melt 4 tablespoons of margarine in a heavy stockpot over medium heat.
  3. Sauté: Add 3/4 cup chopped onion, 1/2 cup chopped carrots, and 1/4 cup chopped celery. Sauté until the vegetables begin to soften, about 3 to 4 minutes.
  4. Simmer: Add 1 (32 ounce) container chicken broth, 1 (19 ounce) can cannellini beans, 1 (14.5 ounce) can stewed tomatoes, 1 1/2 cups cubed potatoes, 1/2 cup shredded cabbage, 2 tablespoons dried parsley, 1 tablespoon tomato paste, 2 cloves minced garlic, and 1 teaspoon salt. Bring to a boil.
  5. Cook: Reduce heat, cover, and let simmer until vegetables are tender, about 1 hour.
  6. Pasta: Add 1/2 cup elbow macaroni and simmer for an additional 30 minutes.
