For the Crust:
- 1 lb beef stew meat, cubed
- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup green beans, trimmed and cut
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium-high heat. Add beef cubes and brown on all sides, about 5 minutes. Remove and set aside.
- In the same pot, sauté onion, carrots, and celery until softened, about 5 minutes. Add garlic and cook for 1 minute until fragrant.
- Return the beef to the pot. Add beef broth, diced tomatoes, green beans, thyme, and rosemary. Bring to a boil.
- Reduce heat to low, cover, and simmer for 25-30 minutes until beef is tender and vegetables are cooked.
- Season with salt and pepper to taste. Serve hot.
