Hearty Vegetable Beef Soup

For the Crust:

  • 1 lb beef stew meat, cubed
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup green beans, trimmed and cut
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium-high heat. Add beef cubes and brown on all sides, about 5 minutes. Remove and set aside.
  2. In the same pot, sauté onion, carrots, and celery until softened, about 5 minutes. Add garlic and cook for 1 minute until fragrant.
  3. Return the beef to the pot. Add beef broth, diced tomatoes, green beans, thyme, and rosemary. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 25-30 minutes until beef is tender and vegetables are cooked.
  5. Season with salt and pepper to taste. Serve hot.
