Delicious bite-sized homemade Twix bars with a buttery shortbread base, gooey caramel, and rich chocolate coating.

For the Crust:
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup soft caramels
- 1 tbsp heavy cream
- 1 cup semi-sweet chocolate chips
- 1 tsp coconut oil
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- In a bowl, mix flour, sugar, and butter until crumbly. Press evenly into the prepared pan and bake for 15-18 minutes until golden. Let cool completely.
- Melt caramels with heavy cream in a microwave-safe bowl, stirring every 30 seconds until smooth. Pour over the cooled shortbread and spread evenly. Chill for 30 minutes.
- Cut the chilled caramel shortbread into small bite-sized rectangles.
- Melt chocolate chips with coconut oil in a double boiler or microwave. Dip each caramel shortbread bite into the melted chocolate, coating completely. Place on parchment paper to set.
- Chill for 15 minutes until chocolate hardens. Serve and enjoy!
