For the Crust:

  • 2 boneless, skinless chicken breasts
  • 2 tbsp honey
  • 2 tbsp lime juice
  • 1 clove garlic, minced
  • 1 tsp cumin
  • 1 cup cooked white rice
  • 1 ripe avocado, sliced
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a bowl, whisk together honey, lime juice, minced garlic, cumin, salt, and pepper.
  2. Add chicken breasts to the marinade, ensuring they are fully coated. Let marinate for at least 30 minutes.
  3. Grill or pan-sear the chicken over medium heat until fully cooked, about 6-7 minutes per side. Let rest before slicing.
  4. In a separate bowl, mix cooked rice with chopped cilantro and a pinch of salt.
  5. To assemble the stack, layer rice, sliced avocado, and chicken in alternating layers. Drizzle with any remaining marinade if desired.
