For the Crust:

  • 4 cups broccoli florets, chopped
  • 1 large Honeycrisp apple, diced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup dried cranberries
  • 1/4 cup sunflower seeds
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine broccoli florets, diced apple, red onion, dried cranberries, and sunflower seeds.
  2. In a small bowl, whisk together Greek yogurt, honey, apple cider vinegar, salt, and black pepper until smooth.
  3. Pour the dressing over the salad and toss until all ingredients are evenly coated.
  4. Chill in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
