For the Crust:

  • 2 lbs potatoes, peeled and quartered
  • 4 cups cabbage or kale, finely shredded
  • 1/2 cup butter
  • 1/2 cup milk or cream
  • 4 green onions, chopped
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Boil the potatoes in salted water until tender, about 15-20 minutes.
  2. While potatoes cook, sauté the cabbage or kale in 2 tablespoons of butter until tender, about 5-7 minutes.
  3. Drain the potatoes and mash with milk or cream and remaining butter until smooth.
  4. Stir in the cooked cabbage or kale and chopped green onions. Season with salt and pepper.
  5. Serve warm with an extra pat of butter on top if desired.
