For the Crust:
- 2 lbs potatoes, peeled and quartered
- 4 cups cabbage or kale, finely shredded
- 1/2 cup butter
- 1/2 cup milk or cream
- 4 green onions, chopped
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Boil the potatoes in salted water until tender, about 15-20 minutes.
- While potatoes cook, sauté the cabbage or kale in 2 tablespoons of butter until tender, about 5-7 minutes.
- Drain the potatoes and mash with milk or cream and remaining butter until smooth.
- Stir in the cooked cabbage or kale and chopped green onions. Season with salt and pepper.
- Serve warm with an extra pat of butter on top if desired.
