For the Crust:

  • 2 cups almond flour
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/2 cup unsalted butter, melted
  • Zest of 1 large orange
  • 1/4 cup fresh orange juice
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • Pinch of salt
  • Powdered sugar for dusting (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
  2. In a large bowl, whisk together almond flour, sugar, baking powder, and salt.
  3. In another bowl, beat eggs, then mix in melted butter, orange zest, orange juice, and vanilla extract.
  4. Combine wet and dry ingredients, stirring until smooth. Pour batter into the prepared pan.
  5. Bake for 30 minutes or until a toothpick inserted in the center comes out clean.
  6. Let cool in the pan for 10 minutes, then transfer to a wire rack. Dust with powdered sugar before serving if desired.
