Description

A flavorful and hearty pasta dish cooked in a rich tomato and wine sauce with Italian sausage and vegetables.

For the Crust:

  • 8 oz pappardelle pasta
  • 1 lb Italian sausage, casings removed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1/2 cup dry red wine
  • 1 (14 oz) can crushed tomatoes
  • 1/2 tsp red pepper flakes
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh basil, chopped
  • 1/4 cup grated Parmesan cheese

Instructions

1. Prepare the Crust:

  1. Cook the pappardelle pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, brown the Italian sausage over medium heat, breaking it into crumbles. Cook until no longer pink, about 5-7 minutes.
  3. Add the diced onion, minced garlic, and sliced red bell pepper to the skillet. Sauté for 3-4 minutes until vegetables soften.
  4. Pour in the red wine and simmer for 2-3 minutes to reduce slightly.
  5. Stir in the crushed tomatoes, red pepper flakes, oregano, salt, and black pepper. Simmer for 10 minutes to let flavors meld.
  6. Add the cooked pasta to the skillet and toss to coat in the sauce. Cook for an additional 2 minutes.
  7. Garnish with fresh basil and grated Parmesan cheese before serving.
