For the Crust:
- 1.5 cups almond flour
- 1/4 cup coconut flour
- 1/2 cup granulated erythritol
- 1 tsp baking powder
- 1/4 tsp salt
- 3 large eggs
- 1/3 cup melted butter
- 1/4 cup unsweetened almond milk
- Zest of 2 lemons
- 1/4 cup fresh lemon juice
- 1 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, mix almond flour, coconut flour, erythritol, baking powder, and salt.
- In another bowl, whisk eggs, melted butter, almond milk, lemon zest, lemon juice, and vanilla.
- Combine wet and dry ingredients until smooth.
- Pour batter into the loaf pan and bake for 30 minutes or until a toothpick comes out clean.
- Let cool before slicing.
