  • 1.5 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 cup granulated erythritol
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3 large eggs
  • 1/3 cup melted butter
  • 1/4 cup unsweetened almond milk
  • Zest of 2 lemons
  • 1/4 cup fresh lemon juice
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix almond flour, coconut flour, erythritol, baking powder, and salt.
  3. In another bowl, whisk eggs, melted butter, almond milk, lemon zest, lemon juice, and vanilla.
  4. Combine wet and dry ingredients until smooth.
  5. Pour batter into the loaf pan and bake for 30 minutes or until a toothpick comes out clean.
  6. Let cool before slicing.
