For the Crust:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 tbsp poppy seeds
- 1 cup milk
- 1/4 cup vegetable oil
- 1 large egg
- 2 tbsp lemon zest
- 2 tbsp fresh lemon juice
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, salt, and poppy seeds.
- In another bowl, mix milk, oil, egg, lemon zest, and lemon juice until combined.
- Pour wet ingredients into dry ingredients and stir until just combined (do not overmix).
- Divide batter evenly among muffin cups, filling each about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
