For the Crust:

  • 1 cup dried lentils, rinsed
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 tbsp olive oil
  • 4 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 bay leaf
  • 1 tbsp lemon juice

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery. Cook until softened, about 5 minutes.
  2. Add garlic, cumin, and paprika. Stir for 1 minute until fragrant.
  3. Pour in vegetable broth and add lentils, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer for 25 minutes or until lentils are tender.
  4. Remove bay leaf and stir in lemon juice before serving.

Notes

You can customize the seasonings to taste.
