For the Crust:
- 1 cup dried lentils, rinsed
- 1 onion, diced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 tbsp olive oil
- 4 cups vegetable broth
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- 1 bay leaf
- 1 tbsp lemon juice
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add onions, carrots, and celery. Cook until softened, about 5 minutes.
- Add garlic, cumin, and paprika. Stir for 1 minute until fragrant.
- Pour in vegetable broth and add lentils, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer for 25 minutes or until lentils are tender.
- Remove bay leaf and stir in lemon juice before serving.
