For the Crust:

  • 4 large russet potatoes, cut into wedges
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sliced Kalamata olives
  • 1/4 cup diced cucumber
  • 1/4 cup diced tomatoes
  • 2 tbsp chopped fresh parsley
  • 1/4 cup tzatziki sauce

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss potato wedges with olive oil, garlic powder, oregano, salt, and pepper until evenly coated.
  3. Arrange wedges in a single layer on the prepared baking sheet. Bake for 25-30 minutes, flipping halfway, until golden and crispy.
  4. Remove from oven and transfer wedges to a serving platter. Top with feta cheese, olives, cucumber, tomatoes, and parsley.
  5. Drizzle with tzatziki sauce and serve immediately.
