For the Crust:
- 4 large russet potatoes, cut into wedges
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup crumbled feta cheese
- 1/4 cup sliced Kalamata olives
- 1/4 cup diced cucumber
- 1/4 cup diced tomatoes
- 2 tbsp chopped fresh parsley
- 1/4 cup tzatziki sauce
Instructions
1. Prepare the Crust:
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, toss potato wedges with olive oil, garlic powder, oregano, salt, and pepper until evenly coated.
- Arrange wedges in a single layer on the prepared baking sheet. Bake for 25-30 minutes, flipping halfway, until golden and crispy.
- Remove from oven and transfer wedges to a serving platter. Top with feta cheese, olives, cucumber, tomatoes, and parsley.
- Drizzle with tzatziki sauce and serve immediately.
