For the Crust:
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- 4 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add chicken breasts and cook until browned on both sides, about 5 minutes per side. Remove and set aside.
- In the same pot, add garlic, sun-dried tomatoes, thyme, oregano, and red pepper flakes. Sauté for 2 minutes until fragrant.
- Pour in chicken broth and bring to a simmer. Return the chicken to the pot and cook for 15 minutes until fully cooked.
- Remove chicken, shred it, and return to the pot. Stir in heavy cream and Parmesan cheese until well combined.
- Add spinach and cook for 2-3 minutes until wilted. Season with salt and pepper to taste.
- Serve hot with crusty bread or over pasta if desired.
