A rich and creamy chicken soup with sun-dried tomatoes and herbs that’s so delicious, it might just inspire a proposal.

For the Crust:

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add chicken breasts and cook until browned on both sides, about 5 minutes per side. Remove and set aside.
  2. In the same pot, add garlic, sun-dried tomatoes, thyme, oregano, and red pepper flakes. Sauté for 2 minutes until fragrant.
  3. Pour in chicken broth and bring to a simmer. Return the chicken to the pot and cook for 15 minutes until fully cooked.
  4. Remove chicken, shred it, and return to the pot. Stir in heavy cream and Parmesan cheese until well combined.
  5. Add spinach and cook for 2-3 minutes until wilted. Season with salt and pepper to taste.
  6. Serve hot with crusty bread or over pasta if desired.

You can customize the seasonings to taste.
