For the Crust:

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar, plus more for rolling
  • 1 teaspoon peppermint extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 3/4 cup mini chocolate chips
  • Green food coloring (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and powdered sugar until light and fluffy. Mix in peppermint extract and food coloring if using.
  3. Gradually add flour and salt, mixing until just combined. Fold in mini chocolate chips.
  4. Roll dough into 1-inch balls and place on prepared baking sheets, spacing about 2 inches apart.
  5. Bake for 12-15 minutes until bottoms are lightly golden. Let cool for 5 minutes.
  6. While still warm, roll cookies in powdered sugar to coat completely. Let cool completely before serving.
