For the Crust:
- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar, plus more for rolling
- 1 teaspoon peppermint extract
- 2 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 3/4 cup mini chocolate chips
- Green food coloring (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter and powdered sugar until light and fluffy. Mix in peppermint extract and food coloring if using.
- Gradually add flour and salt, mixing until just combined. Fold in mini chocolate chips.
- Roll dough into 1-inch balls and place on prepared baking sheets, spacing about 2 inches apart.
- Bake for 12-15 minutes until bottoms are lightly golden. Let cool for 5 minutes.
- While still warm, roll cookies in powdered sugar to coat completely. Let cool completely before serving.
