For the Crust:
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon peppermint extract
- 1 cup semi-sweet chocolate chips
- 1/2 cup white chocolate chips
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In a separate large bowl, beat butter and sugar until light and fluffy. Add egg and peppermint extract, mixing well.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in semi-sweet and white chocolate chips.
- Drop tablespoon-sized dough balls onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 10-12 minutes or until edges are set but centers are still soft.
- Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
