For the Crust:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 1 large egg
  • 1 cup milk
  • 1/4 cup melted butter
  • 1 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Gently fold in the mixed berries.
  4. In another bowl, beat the egg, then mix in milk, melted butter, and vanilla.
  5. Combine wet and dry ingredients, stirring until just mixed (do not overmix).
  6. Divide batter evenly into muffin cups and bake for 20-25 minutes or until golden.
  7. Let cool for 5 minutes before serving.
