For the Crust:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup mixed berries (strawberries, blueberries, raspberries)
- 1 large egg
- 1 cup milk
- 1/4 cup melted butter
- 1 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Gently fold in the mixed berries.
- In another bowl, beat the egg, then mix in milk, melted butter, and vanilla.
- Combine wet and dry ingredients, stirring until just mixed (do not overmix).
- Divide batter evenly into muffin cups and bake for 20-25 minutes or until golden.
- Let cool for 5 minutes before serving.
