Mixed Berry Pie

A delicious and vibrant mixed berry pie with a flaky crust and sweet-tart filling.

For the Crust:

  • 2 1/2 cups all-purpose flour
  • 1 tsp salt
  • 1 cup unsalted butter, chilled and cubed
  • 68 tbsp ice water
  • 4 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
  • 3/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 egg, beaten (for egg wash)
  • 1 tbsp coarse sugar (for sprinkling)

Instructions

1. Prepare the Crust:

  1. In a large bowl, mix flour and salt. Cut in butter until mixture resembles coarse crumbs. Gradually add ice water until dough forms. Divide into two discs, wrap in plastic, and chill for 1 hour.
  2. Preheat oven to 375°F (190°C). Roll out one dough disc to fit a 9-inch pie dish. Place in dish and trim edges.
  3. In a bowl, combine mixed berries, sugar, cornstarch, lemon juice, and vanilla. Pour into pie crust.
  4. Roll out second dough disc and place over filling. Crimp edges to seal. Cut slits in top crust for venting. Brush with egg wash and sprinkle with coarse sugar.
  5. Bake for 45-50 minutes until crust is golden and filling is bubbly. Cool on a wire rack before serving.

You can customize the seasonings to taste.
