A rich and creamy classic New York-style cheesecake with a buttery graham cracker crust.

For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 4 (8 oz) packages cream cheese, softened
- 1 1/4 cups granulated sugar
- 1 tsp vanilla extract
- 4 large eggs
- 2/3 cup sour cream
- 2/3 cup heavy cream
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C). Mix graham cracker crumbs, melted butter, and 1/4 cup sugar in a bowl. Press firmly into the bottom of a 9-inch springform pan.
- In a large bowl, beat cream cheese until smooth. Gradually add 1 1/4 cups sugar and vanilla, mixing well. Add eggs one at a time, beating just until blended.
- Stir in sour cream and heavy cream until smooth. Pour filling over crust. Bake for 55-60 minutes or until center is almost set.
- Turn off oven and leave cheesecake inside with door slightly open for 1 hour. Remove and cool completely before refrigerating for at least 4 hours.
