For the Crust:

  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup crushed Butterfinger candy bars
  • 1/4 cup additional sugar for rolling

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, mix peanut butter, sugar, egg, vanilla, baking soda, and salt until well combined.
  3. Fold in crushed Butterfinger pieces until evenly distributed.
  4. Roll dough into 1-inch balls, then roll each ball in additional sugar to coat.
  5. Place cookies 2 inches apart on baking sheets and flatten slightly with a fork in a crisscross pattern.
  6. Bake for 10-12 minutes until edges are lightly golden. Let cool on baking sheets for 5 minutes before transferring to wire racks.
