A warm and comforting baked oatmeal that tastes just like pecan pie, made with gluten-free oats and natural sweeteners.

For the Crust:
- 2 cups gluten-free rolled oats
- 1/2 cup chopped pecans
- 1/4 cup maple syrup
- 1/4 cup coconut sugar
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 2 cups unsweetened almond milk
- 1 flax egg (1 tbsp ground flax + 3 tbsp water)
- 1 tsp vanilla extract
- 2 tbsp coconut oil, melted
Instructions
1. Prepare the Crust:
- Preheat oven to 375Β°F and grease an 8Γ8 baking dish.
- In a large bowl, mix oats, pecans, coconut sugar, cinnamon, nutmeg, and salt.
- In another bowl, whisk together almond milk, maple syrup, flax egg, vanilla, and melted coconut oil.
- Pour wet ingredients into dry and stir until combined. Transfer to baking dish.
- Bake for 30-35 minutes until set and golden. Let cool 10 minutes before serving.

You can customize the seasonings to taste.
