A warm and comforting baked oatmeal that tastes just like pecan pie, made with gluten-free oats and natural sweeteners.

For the Crust:

  • 2 cups gluten-free rolled oats
  • 1/2 cup chopped pecans
  • 1/4 cup maple syrup
  • 1/4 cup coconut sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
  • 2 cups unsweetened almond milk
  • 1 flax egg (1 tbsp ground flax + 3 tbsp water)
  • 1 tsp vanilla extract
  • 2 tbsp coconut oil, melted

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375Β°F and grease an 8Γ—8 baking dish.
  2. In a large bowl, mix oats, pecans, coconut sugar, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together almond milk, maple syrup, flax egg, vanilla, and melted coconut oil.
  4. Pour wet ingredients into dry and stir until combined. Transfer to baking dish.
  5. Bake for 30-35 minutes until set and golden. Let cool 10 minutes before serving.

Notes

You can customize the seasonings to taste.
