For the Crust:

  • 1 cup oat flour
  • 2 scoops vanilla protein powder
  • 1 cup almond milk
  • 2 eggs
  • 1 tsp cinnamon
  • 1 tbsp maple syrup
  • 1/4 tsp salt
  • 1 tbsp coconut oil (for cooking)

Instructions

1. Prepare the Crust:

  1. In a large bowl, whisk together oat flour, protein powder, cinnamon, and salt.
  2. Add almond milk, eggs, and maple syrup to the dry ingredients. Whisk until smooth.
  3. Heat a non-stick skillet over medium heat and lightly grease with coconut oil.
  4. Pour 1/4 cup of batter into the skillet, swirling to form a thin crepe. Cook for 2-3 minutes per side.
  5. Repeat with remaining batter, stacking crepes on a plate as they cook.

Notes

You can customize the seasonings to taste.
