Delicious, flaky hand pies filled with spiced pumpkin puree, perfect for fall treats.

For the Crust:

  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 1/4 cup ice water
  • 1 cup pumpkin puree
  • 1/4 cup brown sugar
  • 1 teaspoon pumpkin pie spice
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon granulated sugar (for sprinkling)

Instructions

1. Prepare the Crust:

  1. In a large bowl, whisk together flour and salt. Cut in the butter until the mixture resembles coarse crumbs.
  2. Gradually add ice water, 1 tablespoon at a time, until the dough comes together. Shape into a disk, wrap in plastic, and refrigerate for 30 minutes.
  3. In another bowl, mix pumpkin puree, brown sugar, and pumpkin pie spice until smooth.
  4. Preheat oven to 375°F (190°C). Roll out the dough to 1/8-inch thickness and cut into circles.
  5. Place a spoonful of pumpkin filling on half of each circle, leaving a border. Fold dough over and crimp edges with a fork.
  6. Brush pies with egg wash and sprinkle with granulated sugar. Bake for 20-25 minutes until golden brown.

Notes

You can customize the seasonings to taste.
