For the Crust:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, chilled and cubed
- 1/4 cup ice water
- 1 cup pumpkin puree
- 1/4 cup brown sugar
- 1 teaspoon pumpkin pie spice
- 1 egg, beaten (for egg wash)
- 1 tablespoon granulated sugar (for sprinkling)
Instructions
1. Prepare the Crust:
- In a large bowl, whisk together flour and salt. Cut in the butter until the mixture resembles coarse crumbs.
- Gradually add ice water, 1 tablespoon at a time, until the dough comes together. Shape into a disk, wrap in plastic, and refrigerate for 30 minutes.
- In another bowl, mix pumpkin puree, brown sugar, and pumpkin pie spice until smooth.
- Preheat oven to 375°F (190°C). Roll out the dough to 1/8-inch thickness and cut into circles.
- Place a spoonful of pumpkin filling on half of each circle, leaving a border. Fold dough over and crimp edges with a fork.
- Brush pies with egg wash and sprinkle with granulated sugar. Bake for 20-25 minutes until golden brown.
