For the Crust:

  • 1 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 1/3 cup water
  • 1 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350Β°F (175Β°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking soda, salt, and pumpkin pie spice.
  3. In another bowl, beat eggs, then mix in pumpkin puree, vegetable oil, water, and vanilla extract.
  4. Pour wet ingredients into dry ingredients and stir until just combined (do not overmix).
  5. Divide batter evenly among muffin cups, filling each about 3/4 full.
  6. Bake for 20-25 minutes or until a toothpick inserted comes out clean. Cool in pan for 5 minutes before transferring to a wire rack.
