For the Crust:
- 1 3/4 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons pumpkin pie spice
- 2 large eggs
- 1 cup canned pumpkin puree
- 1/2 cup vegetable oil
- 1/3 cup water
- 1 teaspoon vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350Β°F (175Β°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, granulated sugar, brown sugar, baking soda, salt, and pumpkin pie spice.
- In another bowl, beat eggs, then mix in pumpkin puree, vegetable oil, water, and vanilla extract.
- Pour wet ingredients into dry ingredients and stir until just combined (do not overmix).
- Divide batter evenly among muffin cups, filling each about 3/4 full.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean. Cool in pan for 5 minutes before transferring to a wire rack.
