For the Crust:
- 1 cup canned pumpkin puree
- 1 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 1/2 cups rolled oats
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
- 1 cup semi-sweet chocolate chips
Instructions
1. Prepare the Crust:
- Preheat oven to 350Β°F (175Β°C) and line baking sheets with parchment paper.
- In a large bowl, cream together pumpkin puree, brown sugar, butter, egg, and vanilla until smooth.
- In a separate bowl, whisk together flour, oats, baking soda, cinnamon, nutmeg, and salt.
- Gradually mix dry ingredients into wet ingredients until just combined. Fold in chocolate chips.
- Drop tablespoon-sized dough portions onto prepared baking sheets, spacing 2 inches apart.
- Bake for 12-14 minutes or until edges are lightly golden. Cool on wire racks before serving.
