For the Crust:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 34 tablespoons ice water
  • 1 can (15 oz) pumpkin puree
  • 3/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 can (12 oz) evaporated milk

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425°F (220°C).
  2. Make the crust: Mix flour and salt in a bowl. Cut in butter until mixture resembles coarse crumbs. Gradually add ice water until dough forms. Roll out and place in a 9-inch pie dish.
  3. Make the filling: Whisk together pumpkin puree, sugar, spices, and salt. Beat in eggs, then gradually stir in evaporated milk until smooth.
  4. Pour filling into crust. Bake at 425°F for 15 minutes, then reduce heat to 350°F and bake for 40-45 minutes until set.
  5. Cool completely before serving.
