For the Crust:

  • 2 cups all-purpose flour
  • 1/3 cup brown sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/4 teaspoon cloves
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup pumpkin puree
  • 1/3 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, brown sugar, baking powder, salt, and spices.
  3. Cut in cold butter until mixture resembles coarse crumbs.
  4. In another bowl, mix pumpkin puree, cream, egg, and vanilla. Pour into dry ingredients and stir until just combined.
  5. Turn dough onto floured surface, knead gently, and pat into a 1-inch thick circle. Cut into 8 wedges.
  6. Place scones on baking sheet and bake for 15-18 minutes until golden. Cool slightly before serving.
