For the Crust:
- 1 cup all-purpose flour
- 1/2 cup pumpkin puree
- 1/2 cup graham cracker crumbs
- 1/4 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 tsp pumpkin pie spice
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup mini marshmallows
- 1/2 cup chocolate chips
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, graham cracker crumbs, pumpkin pie spice, baking soda, and salt.
- In another bowl, cream butter and sugars until fluffy. Add pumpkin puree, egg, and vanilla, mixing well.
- Gradually fold dry ingredients into wet ingredients until combined. Stir in chocolate chips.
- Drop tablespoon-sized dough onto the baking sheet. Bake for 10 minutes.
- Remove from oven, press a few mini marshmallows onto each cookie, and return to bake for 2 more minutes.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
