A delightful twist on classic s’mores with pumpkin spice cookies, marshmallows, and chocolate.

For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup pumpkin puree
  • 1/2 cup graham cracker crumbs
  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup mini marshmallows
  • 1/2 cup chocolate chips

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, graham cracker crumbs, pumpkin pie spice, baking soda, and salt.
  3. In another bowl, cream butter and sugars until fluffy. Add pumpkin puree, egg, and vanilla, mixing well.
  4. Gradually fold dry ingredients into wet ingredients until combined. Stir in chocolate chips.
  5. Drop tablespoon-sized dough onto the baking sheet. Bake for 10 minutes.
  6. Remove from oven, press a few mini marshmallows onto each cookie, and return to bake for 2 more minutes.
  7. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

You can customize the seasonings to taste.
