For the Crust:
- 8 oz pasta of choice
- 1 cup roasted red peppers (jarred or fresh)
- 1/2 cup raw cashews (soaked for 2 hours)
- 2 cloves garlic
- 1/4 cup nutritional yeast
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup water (adjust for consistency)
- Fresh basil for garnish
Instructions
1. Prepare the Crust:
- Cook pasta according to package instructions. Drain and set aside.
- In a blender, combine roasted red peppers, soaked cashews, garlic, nutritional yeast, lemon juice, salt, and black pepper. Blend until smooth, adding water as needed for a creamy sauce.
- Toss the cooked pasta with the red pepper cashew sauce until well coated.
- Garnish with fresh basil and serve warm.
