For the Crust:

  • 8 oz pasta of choice
  • 1 cup roasted red peppers (jarred or fresh)
  • 1/2 cup raw cashews (soaked for 2 hours)
  • 2 cloves garlic
  • 1/4 cup nutritional yeast
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup water (adjust for consistency)
  • Fresh basil for garnish

Instructions

1. Prepare the Crust:

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a blender, combine roasted red peppers, soaked cashews, garlic, nutritional yeast, lemon juice, salt, and black pepper. Blend until smooth, adding water as needed for a creamy sauce.
  3. Toss the cooked pasta with the red pepper cashew sauce until well coated.
  4. Garnish with fresh basil and serve warm.
