For the Crust:
- 1.5 lbs baby potatoes, halved
- 8 oz block feta cheese
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C).
- Toss halved potatoes with olive oil, minced garlic, oregano, smoked paprika, salt, and pepper. Spread evenly on a baking sheet.
- Place the feta block in the center of the potatoes. Drizzle with a little olive oil.
- Bake for 25-30 minutes until potatoes are golden and crispy, and feta is soft.
- Garnish with fresh parsley before serving.
