For the Crust:

  • 2 pounds red potatoes, quartered
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss potatoes with olive oil, garlic, rosemary, thyme, salt, and pepper until evenly coated.
  3. Spread potatoes in a single layer on a baking sheet. Roast for 25-30 minutes, stirring halfway, until golden and crispy.
