A rich and flavorful soup made with roasted tomatoes and fresh basil.

For the Crust:
- 2 lbs ripe tomatoes, halved
- 1 onion, chopped
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1/4 cup fresh basil leaves, chopped
- 4 cups vegetable broth
- 1/2 cup heavy cream
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Place tomatoes, onion, and garlic on a baking sheet. Drizzle with olive oil and season with salt and pepper.
- Roast for 30 minutes until tomatoes are soft and slightly caramelized.
- Transfer roasted vegetables to a blender. Add basil and vegetable broth. Blend until smooth.
- Pour the mixture into a pot and bring to a simmer. Stir in heavy cream and adjust seasoning if needed.
