For the Crust:
- 1.5 lbs beef sirloin, cut into bite-sized pieces
- 1.5 lbs baby potatoes, halved
- 1/2 cup unsalted butter, melted
- 4 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
1. Prepare the Crust:
- In a slow cooker, combine beef bites and halved potatoes.
- In a small bowl, mix melted butter, minced garlic, thyme, rosemary, salt, and pepper.
- Pour the garlic butter mixture over the beef and potatoes, tossing to coat evenly.
- Cover and cook on low for 6-7 hours or high for 3-4 hours until beef is tender and potatoes are cooked through.
- Garnish with fresh parsley before serving.
