For the Crust:

  • 1.5 lbs boneless, skinless chicken thighs
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1/2 tsp red pepper flakes
  • 1/4 cup chicken broth
  • 2 tbsp chopped peanuts (for garnish)
  • 2 tbsp chopped cilantro (for garnish)

Instructions

1. Prepare the Crust:

  1. Place chicken thighs in the slow cooker.
  2. In a bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, garlic, ginger, red pepper flakes, and chicken broth until smooth.
  3. Pour the sauce over the chicken, ensuring it is evenly coated.
  4. Cover and cook on low for 4-5 hours or high for 2-3 hours, until chicken is tender.
  5. Shred the chicken slightly with a fork and stir to coat in the sauce.
  6. Garnish with chopped peanuts and cilantro before serving.
