For the Crust:
- 1.5 lbs boneless, skinless chicken thighs
- 1/2 cup peanut butter
- 1/4 cup soy sauce
- 1/4 cup honey
- 2 tbsp rice vinegar
- 2 cloves garlic, minced
- 1 tsp ginger, grated
- 1/2 tsp red pepper flakes
- 1/4 cup chicken broth
- 2 tbsp chopped peanuts (for garnish)
- 2 tbsp chopped cilantro (for garnish)
Instructions
1. Prepare the Crust:
- Place chicken thighs in the slow cooker.
- In a bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, garlic, ginger, red pepper flakes, and chicken broth until smooth.
- Pour the sauce over the chicken, ensuring it is evenly coated.
- Cover and cook on low for 4-5 hours or high for 2-3 hours, until chicken is tender.
- Shred the chicken slightly with a fork and stir to coat in the sauce.
- Garnish with chopped peanuts and cilantro before serving.
