Tender, fall-off-the-bone beef short ribs cooked low and slow in a rich, savory sauce.

For the Crust:
- 3 lbs beef short ribs
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 cups beef broth
- 1/2 cup red wine
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- Salt and black pepper to taste
- 2 tbsp cornstarch (optional, for thickening)
Instructions
1. Prepare the Crust:
- Season short ribs generously with salt and pepper.
- Place chopped onion and minced garlic in the bottom of the slow cooker.
- Arrange short ribs on top of the vegetables.
- In a bowl, whisk together beef broth, red wine, tomato paste, Worcestershire sauce, and thyme. Pour over the short ribs.
- Cover and cook on low for 8 hours, or until meat is very tender.
- Optional: For a thicker sauce, mix cornstarch with 2 tbsp water and stir into the slow cooker during the last 30 minutes of cooking.
