Slow Cooker Short Ribs

Description

Tender, fall-off-the-bone beef short ribs cooked low and slow in a rich, savory sauce.


Ingredients

For the Crust:

  • 3 lbs beef short ribs
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1/2 cup red wine
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • Salt and black pepper to taste
  • 2 tbsp cornstarch (optional, for thickening)

Instructions

1. Prepare the Crust:

  1. Season short ribs generously with salt and pepper.
  2. Place chopped onion and minced garlic in the bottom of the slow cooker.
  3. Arrange short ribs on top of the vegetables.
  4. In a bowl, whisk together beef broth, red wine, tomato paste, Worcestershire sauce, and thyme. Pour over the short ribs.
  5. Cover and cook on low for 8 hours, or until meat is very tender.
  6. Optional: For a thicker sauce, mix cornstarch with 2 tbsp water and stir into the slow cooker during the last 30 minutes of cooking.
